ISO Yummy Gazpacho recipe
erm, I've looked for recipes becoz we had a really excellent one at a restaurant last weekend. The chef would not part with her recipe so I am turning to my gourmet mums!!
It seems the classic version shd involve stale bread, but I am quite quite sure, there was no bread in the one I had.
In any case, I would love to have some nice recipes if you hae a tried-and-true one to share. We have a BBQ potluck next week and I thot it wld be nice to bring a Gazpacho! :p

I just made a lovely one a few weeks ago. It is sooo easy and tasty too.
Spicy Gazpacho
Peel, seed, and chop 8 tomatoes. Mince 5 cloves of garlic. Chop 5 stalks celery and 2 medium red onions. Combine with 5 T extra virgin olive oil, 2 T lemon juice, 1 T raw wine vinegar, 2 1/2 t paprika, 1 1/2 t ground cumin, 1/4 t cayenne pepper, and 1/2 C cilantro, chopped. Process in batches in a food processor until almost smooth. Add up to 1 C water to desired consistency. Salt and pepper. Serve chilled.
This is not the traditional fare, but very good.

Here's another recipe. DH says it seems like salsa to him, but he HATES tomatoes, so I suspect he just lumps together everything that tastes remotely tomato-ey. I love it - I can eat the whole batch in a day or two!
Coarsely chop the following veggies:
about 2lbs tomatoes
one large cucumber, peeled and seeded
1/2 each red and green bell peppers, seeded
1/2 red onion
Put in food processor (if needed, process in batches - my processor is large enough that I can do the whole recipe at once, after I've processed some of the veggies down). Add:
1/4 cup each red wine vinegar and tabasco sauce
3 cloves garlic, minced
3tbls olive oil
1tsp salt
2tbls fresh basil leaves, finely chopped
process all until smooth. chill at least one hour before serving. if you want, you can chop about two cups of veggies (tomatoes, cucumber, red and green bell peppers) to use as a garnish. either stir them into the gazpacho, or just sprinkle on top of individual serving bowls. I never do this - I'm the only one eating the gazpacho, and I don't need garnish :D
Enjoy. It is pretty spicy, I'll admit. But delish!
