But whats the difference between a fryer chicken and a roaster chicken?
And whats a utility grade turkey?

A fryer is smaller and younger. For frying chicken, you don't want the pieces too big or they burn on the outside before they cook on the inside, which is why the smaller ones are called fryers. Roasters are larger and generally older (harvested around 12 weeks of age rather than 6 to 8 for fryers). You can roast a fryer, but don't try to fry a roaster. Either one is fine for making stock or cutting up for all kinds of other dishes.
I have never heard of utility grade turkey. Sounds gross, like the lowest grade. But then, I don't buy conventional chicken or turkey, so I haven't paid much attention to how they're labeled anymore.
